My Super Simple Mango Lassi.
Mango lassi is a refreshing mango and yogurt beverage, a.k.a. India’s smoothie. It is very popular in India and you can find it at any Indian restaurant.
On this hot windy winter day (such strange California weather), I was craving some mango lassi. So I decided to make my own!
My aunt introduced me to Trader Joe’s Plain Kefir, a delicious yogurt beverage. This drink is yummy and full of protein (14 grams!), which is always a plus. The “Plain” Kefir has a tart yogurt flavor and creamy consistency, which is perfect for mango lassi.
This mango lassi is a piece of cake to make…and oh so refreshing!
All you need is:
-2 cups plain Kefir
-1 1/2 cups Mango Pulp (which you can find at any Indian grocery store)
-A handful of ice cubes
Makes 3-4 servings.
Instructions:
Combine.
Blend.
Pour on the rocks.
Sip.
Enjoy.
*If you desire a sweeter drink, add more mango pulp, or a tablespoon of sugar.
**If you do not have access to an Indian store, try using Mango Nectar juice and frozen/fresh mango pieces.
